6 (6 inch) French sandwich rolls
1 1/2 lb mild Italian sausage
1/4 cup chopped onion
1 large egg, lightly beaten
1 tsp dried oregano
4 red or green bell pepper, cut into thin strips
1 medium onion, thinly sliced
2 tbsp vegetable oil
1/2 tsp salt
1/8 tsp pepper
1 tbsp white vinegar

Cut a 3/4 inch slice from top of each roll; set tops aside. Scoop out bottoms of rolls, leaving 1/2 inch shells; tear bread pieces to measure 1/2 cup soft breadcrumbs. Set shells and breadcrumbs aside.

Remove and discard casings from sausage; crumble sausage into a large bowl. Add reserved breadcrumbs, chopped onion, egg and oregano; knead with your hands to mix well. Divide mixture into 6 equal portions, and shape into 5x2 inch oval patties.

Grill, covered, over medium-high heat 7 minutes on each side or until done. Remove from grill and keep warm. Cook pepper strips and onion in oil in a skillet over medium-high heat, stirring constantly, 5 minutes or until crisp-tender. Stir in salt, pepper and vinegar; spoon evenly into bread shells. Top with sausage patties and bread tops; serve immediately. Serves 6
