SPICY APPLE PANCAKES WITH CIDER SAUCE

2 cups biscuit mix
1/2 tsp cinnamon
1 egg
1 1/3 cups milk
3/4 cup apple, about 2 medium, grated

Cider sauce
1 cup sugar
2 tbsp cornstarch
1/4 tsp cinnamon and nutmeg
2 cups apple cider
2 tbsp lemon juice
1/4 cup butter

Beat first 4 ingredients until smooth. Stir in apples. Grease griddle and pour batter by 1/4 cup measure onto hot griddle. Bake until bubbles appear, turn and bake other side until golden brown. Serve with sauce. Makes 18 (4 inch) pancakes

Sauce: In saucepan, mix first 4 ingredients. Stir in cider and juice. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. Remove from heat; stir in butter.
