GORGONZOLA SAUCE

1 1/2 cups dry white wine
1 1/4 cups heavy cream OR half-and-half plus 1 tsp cornstarch
2 tbsp grated parmesan cheese
4 oz gorgonzola cheese, crumbled
Pinch ground nutmeg
Black pepper, to taste
In medium saucepan, cook white wine over high heat until reduced by half. Add cream, reduce heat, and cook until reduced by one-third. Add remaining ingredients. Stir until cheese melts and sauce is creamy. Serves 4 Note: This is really good served over pasta with slices of grilled chicken, shrimp or steak. Saute favorite vegetables and mix in with pasta and serve meat over all.
