CHIPOTLE HONEY SAUCE

1 tbsp olive oil
1 medium sweet onion, chopped (about 1 cup)
1 medium chipotle pepper in adobo sauce, chopped
1 tsp finely chopped garlic, ground cumin
1 Beef bouillon cube, crumbled
1 (14-1/2 oz) can diced or whole peeled tomatoes, undrained
1/2 cup water
1 tbsp honey
3 tbsp chopped fresh cilantro

In 12 inch nonstick skillet, heat olive oil over medium-high heat and cook onion, stirring occasionally, 3 minutes or until tender. Add chipotle pepper, garlic and cumin and cook, stirring occasionally, 1 minute. Stir in bouillon cube, tomatoes and water.

Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 15 minutes. Remove from heat. Stir in honey and cilantro.

In blender or food processor, process mixture until smooth. Serve with grilled steak, pork tenderloin or chicken. Makes about 2 cups
