Rub
2 lb barbecue spice
1 cup lemon pepper
1/2 lb brown sugar
1 tbsp dry mustard
1 cup granulated garlic
1/2 cup granulated onion
1 tbsp salt
Braising liquid
1 gallon pork stock
2 cups apple cider vinegar
1/2 cup pickling spice
1/2 lb brown sugar
Rub: Combine ingredients. This is used to rub the meat side of ribs.
Braising liquid: Mix ingredients until sugar dissolves. Place rubbed ribs into a pot deep enough to stand ribs in and cover. Pour mixture into bottom of pan, place ribs standing in pan. Cover and bake at 375 for 1 hour.
Check ribs, if tender, take from pan and place on mesquite grill and baste with barbecue sauce for 5 minutes; turn ribs and baste again for 5 minutes. Repeat process twice.
