FRESH MOZZARELLA WITH BASIL

16 oz fresh mozzarella cheese
1/4 cup olive oil or roasted garlic oil
1 tsp balsamic vinegar
2 tbsp fresh or 1 tsp dried basil
1 tbsp cracked pepper
1 tomato, diced
1 loaf baguette, sliced

Cut cheese into 1 inch cubes and place in a bowl. Add next 4 ingredients and toss until cheese is well-coated with oil and seasonings, stir in tomatoes. Serve immediately. Spear cheese with toothpicks and serve with bread slices.
