COCA-COLA CAKE I

Cake:
2 cup flour
2 cup sugar
1 tsp baking soda
1/4 tsp salt
2 eggs
1 tsp vanilla extract
1/2 cup buttermilk
1 cup unsalted butter
1 cup cola
2 tsp unsweetened cocoa powder
1 1/2 cup miniature marshmallows

Frosting:
1/2 cup butter, at room temperature
2 tsp unsweetened cocoa powder
Pinch salt
1 lb (about 4 cup) confectioners sugar
1/4 cup cola
1 tsp vanilla extract
1 cup chopped nuts

Set the oven to 350. Grease a 13 x 9 inch baking pan and set it aside.

For the dry ingredients in a large bowl. In a separate bowl, mix the eggs, vanilla and buttermilk and add to the flour mixture. Bring the butter, cola and cocoa powder to a boil in a saucepan and add to the flour mixture. Mix until everything is well blended. Stir in marshmallows. Pour the batter into the prepared pan. Bake for 35-45 minutes or until a tester comes out clean. Remove the cake from the oven and allow it to cool in the pan on a cake rack.

Frosting: Cream together the butter, cocoa powder, salt and confectioners sugar, using an electric mixer. Add the cola and vanilla and mix thoroughly. Stir in the nuts by hand. Frost the cooled cake and serve from the pan.
