CHEDDAR CHOWDER

2 cups water and diced potatoes
1/2 cup diced carrots and celery
1/4 cup chopped onion
1 tsp salt
1/4 tsp pepper

White sauce
1/4 cup butter and flour
2 cups milk and grated cheddar cheese
1 cup cubed ham

Combine first 7 ingredients in a Dutch oven. Boil 10-12 minutes or until potatoes are tender. Do not drain. Meanwhile, in a saucepan, make white sauce by melting butter. Add flour and stir until smooth, about 1 minute. Slowly add milk, cook, stirring constantly until thickened. Add grated cheese and stir until melted. Add sauce and ham to vegetables in Dutch oven. Heat through.

NOTE: Good cheese combination – half cheddar and half Velvetta.

ESSENCE CREOLE SEASONING (also referred to as Bayou Blast) - Emeril
2 1/2 tbsp paprika
2 tbsp salt
2 tbsp garlic powder
1 tbsp black pepper
1 tbsp onion powder
1 tbsp cayenne pepper
1 tbsp dried oregano
1 tbsp dried thyme

Combine all ingredients thoroughly. Yield: 2/3 cup
