BASIL MARINATED CHICKEN

Marinade
1/2 cup dry white wine and oil
2 tbsp finely chopped onion
2 tsp dried basil leaves
1 (2 1/2 - 3 lb) chicken, cut up
In a resealable bag, combine marinade ingredients; blend well and add chicken; turning to coat. Seal and refrigerate 3-4 hours or overnight, turning occasionally. Heat grill.
When ready, drain chicken, reserving marinade. Place chicken, skin side down 4-6 inch form medium coals. Cook 40-60 minutes or until chicken is tender and juices run clear, turning often and brushing frequently with marinade. Discard any remaining marinade. Serves 4-5.
NOTE: Can be baked in the oven at 350, skin-side down for 45-55 minutes, turning once and basting with marinade.
