TUSCAN CHICKEN

2 shallots
2 tsp molasses
2 tbsp tomato paste
12 peeled garlic cloves
1 tsp chopped rosemary and oregano
Juice and peel of one lemon
1/2 cup dry red wine
2 chickens, quartered

In food processor, combine all ingredients except chicken and process until herbs are finely minced. Place chickens in a shallow dish and pour marinade over them. Cover; refrigerate several hours or overnight, turning several times.

Grill chicken, bone-side down over a drip pan. Cover and grill until tender over medium-hot coals, turning several times; basting with marinade, until crisp and browned, about 40 minutes
