HONEY AND LIME TEXAS BARBECUE SAUCE

1/2 cup minced onion
4 garlic cloves, minced
1/4 cup cider vinegar
1 1/2 cups water
1/2 cup honey
1 tbsp dark molasses
4 tbsp dark brown sugar
2 tbsp fresh lime juice
1 tbsp plus 1/2 tsp liquid smoke
2 tbsp Worcestershire sauce
1 tsp chicken bouillon, paprika and dry mustard
1/2 tsp salt
1/4 tsp pepper
2 strips lime peel
Sauté onions in skillet until lightly caramelized, about 5 minutes; add garlic and continue to cook for 2 more minutes. All remaining ingredients; increase heat to medium-high and bring to a boil. Stirring constantly, cook at boil for 10 minutes. Reduce heat to low and simmer 1 hour. Remove peel from sauce and discard. Sauce can be refrigerated up to 5 days.
