CRUSTED SALMON

Category: Seafood and Fish - Grilled

1/3 cup mayonnaise
1 tbsp lemon juice
1 garlic clove, minced
1 tsp dried dill weed
1/2 tsp salt
tsp black pepper
4 salmon steaks or fillets (6 to 8 oz each)

Spray the cold grill racks with nonstick cooking spray. Preheat the grill to medium heat.

In a small bowl, combine all the ingredients except the salmon; mix well. Rinse the salmon with cold water and pat dry with paper towels. Spread the mixture over both sides of the salmon, dividing it evenly.

Grill the salmon for 10 to 12 minutes or until the fish flakes easily with a fork and is cooked through in the center. Serve immediately. Serves 4

NOTE: If you have a hinged grill basket, use it for the salmon. It's really the best way to grill fish.
