BARBECUED CHICKEN WITH CREOLE SAUCE

1 (3 1/2 to 4-lbs) whole chicken
Sauce
1 tbsp oil
1 medium green pepper and onion, chopped
1 garlic clove, minced
1 cup ketchup
2 tbsp light brown sugar
3 tbsp red wine vinegar
1 1/4 tsp salt
1/2 tsp hot pepper sauce
4 chicken breasts
Parsley, garnish

Heat grill. Separate coals to place a drip pan in between the coals. Place chicken on a cooking stand. Cook approximately 25-30 minutes on indirect heat. During the last 10 minutes, brush frequently with sauce. Serve with reserved sauce.

Sauce: Cook saucepan with oil. Add onion and pepper in saucepan. Add garlic and stir for one minute. Stir in remaining ingredients, along with 2 tbsp water. Heat to boiling and reduce to low, covered, simmer 5 minutes. Remove half from brushing while grilling. Reserve half the sauce for dipping.
