MEMPHIS STYLE COLA BBQ RIBS

Category: Ribs

1 (12 oz) can cola soda
1 cup packed brown sugar
1/2 cup smoke house barbecue sauce
2 medium onions, chopped
2 tbsp soy sauce
2 cloves garlic, minced
Salt and pepper to taste
2 to 3 lbs pork ribs, cut in half lengthwise

In large casserole or roasting pan, combine soda, barbecue sauce, onions, soy sauce, garlic and salt and pepper to taste. Add ribs, turning to coat. Cover and refrigerate 2 hours or overnight. Remove ribs from marinade, draining liquid into saucepan. Boil 12 minutes. Reserve half the cooked marinade for basting and the remaining mixture for serving on the side. Grill ribs over high heat for 1 minute per side.

Cook, covered, over indirect heat of grill for 30 minutes until ribs are no longer pink near bone, turning and basting with reserved cooked marinade. Thicken reserved marinade mixture: blend 1 Tbsp. cornstarch with 2 Tbsp. water. Add to remaining marinade in saucepan. Bring to a boil and cook 1 minute until thickened. Serve with additional Barbecue Sauce. Serves 4
