* LEMON CHEESECAKE PIE*

1 graham cracker crust
1 (12 oz) can evaporated milk, undiluted
2 (8 oz) pkg cream cheese
1 pkg instant lemon pudding mix
1 (6 oz) can frozen lemonade concentrate, thawed
1 cup whipped topping

Mix milk and the instant pudding mix. Beat slowly with a beater just until well mixed. Set aside.

Beat cream cheese until fluffy. Gradually add lemonade concentrate; continue beating until smooth, light fluffy, about 3-4 minutes. Fold pudding mixture into cream cheese, blending Pour at once into graham cracker crust. Sprinkle graham cracker crumbs lightly over top. Chill 3-4 hours. Top with whipped topping before serving.
