MEATLOAF WITH ONION STUFFING

1 1.2 lbs ground beef
1/2 lb ground pork
4 slices bread, soaked in warm water than then squeezed
1 onion, minced
1 tbsp salt
1/4 tsp pepper
2 eggs, beaten
Stuffing
3 tbsp oil
3 onions, finely chopped
1 1/2 cups bread crumbs
1 tsp sage
1/2 tsp salt
1/8 tsp pepper
2 tbsp parsley
1 egg, beaten
2 tsp water
1/2 cup chili sauce
Preheat oven to 350. Mix together loaf ingredients. Reserve one-third mixture and line loaf pan with meatloaf.
To make stuffing: Heat oil in a skillet and saute onions until golden, about 10 minutes. Add bread crumbs and seasonings. Saute until evenly browned. Remove from heat and mix in egg and water.
Fill the center of the loaf pan with stuffing. Cover with the reserved meat. Top with chili sauce. Bake 45 minutes.
