COCONUT CHOCOLATE ALMOND BARS

Crust
1 1/3 cup flour
2 tbsp brown sugar
1/4 tsp salt
1/2 cup unsalted butter, cut up and chilled

Filling
1/2 cup semi-sweet chocolate chips
1 egg
1 cup brown sugar
1 tbsp flour
1/4 tsp salt
1/8 tsp almond extract
3/4 cup coconut, reserve 2 tbsp
1/3 cup coarsely chopped almonds

Preheat oven to 350. Lightly grease an 8 inch square baking pan. Crust: Mix dry ingredients and add butter and cut in until crumbled. Press into bottom of pan and up sides slightly. Bake 15 minutes.

Topping: Scatter chocolate chips over crust when it comes out of the oven. Beat egg until light and fluffy. Gradually beat in next 6 ingredients, adding coconut and almonds after everything else is combined. Spread over melted chocolate. Sprinkle with reserved coconut. Return to oven and bake 20 minutes. Cool pan on wire rack and cool completely.

While still warm, cut into bars. Store bars, wrapped for a day or two at room temperature; refrigerate or freeze for longer storage. Allow to come to room temperature before serving.
