SMOKED SALMON MOUSSE I

Category: Spreads -- Cold

3/4 lb smoked salmon
1/2 lb cream cheese
2 tbsp lemon juice
Dash hot pepper sauce
1/4 cup finely chopped green onions
2 tbsp chopped fresh dill
1 cup real whipping cream

In a food processor, puree salmon and next 3 ingredients until smooth. Turn into a large bowl; stir in green onions and dill.

In a separate bowl, beat cream until soft peaks form. Stir 1/3 cream into smoked salmon mixture; folding in remaining cream.

Line a 4 cup bowl with plastic wrap, allowing it to overhang slightly. Turn mousse into bowl, gently smoothing surface. Cover with plastic wrap overhang.

Refrigerate about 2 hours or until set. Turn out onto serving plate; discard plastic. Serve with crackers or thinly sliced bread.
