CUCUMBER SALAD

2 1/4 lbs cucumber, peeled
1 tsp salt
2 1/2 oz sour cream
1 tsp medium-strength mustard
1/2 tsp Knorr Aromat seasoning (sold at German specialty markets)
1 tbsp chopped fresh dill

Finely slice the cucumber (you may use a food processor fitted with a slicing blade, a mandoline or a chef's knife). Add the salt and mix well. Let the cucumbers rest for about 10 minutes, then drain them thoroughly in a colander.

In a small bowl, mix sour cream, mustard, Aromat seasoning and dill until combined. Add to the cucumbers. Taste and season with salt if necessary. Serves 6 to 8.
