1 lbs Camembert cheese, cut into cubes (room temperature)
1/2 lbs butter, room temperature
4 tsp paprika
1/4 tsp ground caraway seeds
1/4 tsp kosher salt
Freshly ground white pepper to taste
1 cup heavy cream
1/2 medium chopped white onion, for serving
Snipped chives, tomato wedges for garnish and serving
Rye bread, pretzel sticks or fresh pretzels for serving
In the bowl of a food processor, combine Camembert, butter, spices, salt and pepper. Blend in cream. Refrigerate until chilled. Using an ice cream scoop, make mounds on a lettuce-lined plate. Garnish platter with onion, chives and tomato wedges. Serve with rye bread or pretzels. Makes 24 servings.
