SPINACH ALFREDO

1 oz butter
1/2 cup onion, finely chopped
1 tsp chopped garlic
4 tsp flour
1 1/2 cups heavy cream
3/4 cup half-and-half
1/2 tsp kosher salt
1/4 tsp white pepper
2 oz cream chese
1/2 tsp chicken bouillon
1 (12 oz) pkg chopped frozen spinach, thawed and squeezed dry
1/2 cup grated parmesan cheese
Melt butter ina saucepan. Add onion and garlic; saute for 3-4 minutes. Add flour to make a roux, stirring 2-3 minutes so the flour does not brown. Add cream and next 5 ingredients. Bring to a low boil and simmer for 8 minutes, stirring often until mixture thickens. Add spinach and cook 4-5 minutes to heat spinach thorough. Remove form heat and blend in cheese. Serve.
