MINI CHEESEBURGERS

1 pound ground chuck
1/4 cup Worcestershire sauce
12 slices American cheese
1/4 cup ketchup (optional)
2 tbsp mustard and mayonnaise (optional)
1 tbsp pickle relish, finely minced (optional)
48 mini rolls, in the shape of hamburger buns
Preheat the oven to 450 degrees. Line a rimmed baking sheet with foil to facilitate cleanup. Pinch off one tbsp of beef at a time and form into balls. Arrange 1 1/2 inches apart on baking sheet and flatten into 2 inch patties. Brush with Worcestershire sauce. Bake until burgers are just browned, about 5 minutes. Let cool. Lower oven temperature to 400.
Using a 1 1/2 inch round cookie cutter, cut 4 rounds of cheese from each slice. Place directly on cooked meat patties.
Slice buns or rolls but not all the way through. Using a small spatula, place meat patties in buns. In a small bowl, combine ketchup, mustard mayonnaise, and relish. Stir until well mixed. Spoon 1/2 tsp sauce onto each patty. Arrange burgers in buns on baking sheet and cover with foil. If made in advance you can refrigerate up to 24 hours. Bake uncovered until burgers are heated through and cheese has melted, about 15 minutes.
