BRACIOLA VERDI

2 lb (1/4 inch thick) beef round steak
1 tsp dried crushed basil
1/2 tsp ground nutmeg and finely crushed bay leaf
4 oz thinly sliced prosciutto and provolone cheese
1/4 cup grated parmesan cheese
1/2 cup chopped onion
1/4 cup chopped green pepper
1 lb butter
1 tbsp oil
1 cup beef broth
1/4 cup Marsala wine
2 tbsp brandy
1 tbsp cornstarch

Cut steak into 6 rectangular pieces. Mix spices together and sprinkle over meat. Layer prosciutto and cheese over each piece of meat. Sprinkle with parmesan cheese, roll and tie with butcher string. Cook onions and peppers in butter and oil. Add meat and brown.

Add broth and wine. Cover and simmer 35-40 minutes. Add brandy and simmer 10 minutes more. Remove meat. Boil broth until reduced to 1 1/4 cups.

Blend cornstarch and 1/4 cup cold water; stir into hot mixture in skillet. Cook and stir until thickened and bubbly. Cook 1 minute more. Season with salt and pepper. Serves 4-6
