BAKED BEANS AND BRATS CASSEROLE

1 tbsp olive oil
1 yellow onion, thinly sliced
1 lb bratwurst, cut into fat slices
2 16-oz cans baked beans
1/2 cup bread crumbs

Preheat oven to 400. In a 4-quart ovenproof pot or Dutch oven, heat the oil over medium-high heat. Add the onion; saute for 7 to 10 minutes or until golden. Add bratwurst; saute for 5 to 7 minutes or until brown.

Add baked beans and bring to a simmer. Top with the bread crumbs. Bake, uncovered, about 40 minutes or until bubbly and golden.

Servings: 4 to 6
