NEW POTATOES AND PESTO

1 1/2 lbs new potatoes, quartered
1 tsp salt
1/2 tsp pepper
1 cup prepared pesto

Place the potatoes in a medium pot, cover with cold water and bring to a boil. Add the salt and pepper, reduce heat and simmer until tender, 12 to 15 minutes.

Drain and run under cold water to cool. Serve with pesto for dipping. Serves 8.
