CHEESE STUFFED MEATLOAF

1 lb ground beef
1 cu spaghetti sauce, divided
1 egg, slightly beaten
1/4 cup dry bread crumbs
Salt and pepper, to taste
1 cup shredded mozzarella cheese, divided
1 tbsp finely chopped parsley
Preheat oven to 350. In a large bowl, combine beef, 1/2 cup sauce, egg and bread crumbs. Season with salt and pepper. Line a 13x9 inch baking pan with waxed paper. Shape meat into a 12x8 inch rectangle on the paper.
Combine 3/4 cup cheese with the parsley. Sprinkle the mixture lengthwise down the center of the meat, leaving about a 1/2 inch border on each edge. Starting at one of the longer sides, lift the waxed paper to roll the meat jelly-roll style over the filling. Remove the waxed paper. Pinch the meat at ends and seam at seal.
Bake uncovered for 45 minutes. Pour remaining sauce over mat and sprinkle with remaining cheese. Bake an additional 15 minutes or until cheese is melted. Let stand about 5 minutes before serving. Serves 4
