SPICY RUM GARLIC SHRIMP

1 lb large, peeled and deveined
3 cloves garlic, minced
1/2 tsp fresh cilantro, chopped
1 small hot pepper, seeded and chopped
2 tbsp corn oil
2 oz dark rum
Pinch of salt

In a skillet, heat oil over medium heat. Add garlic, cilantro and pepper; saute for 30 seconds being careful not to allow the garlic to brown or burn. Add the shrimp and saute until they turn pink, about 3-5 minutes over medium heat. Add rum to the pan and tilt to flame or use a match to light it. Allow it to flambe until the flame dies, about 1 minute. Serve immediately.
