ALL-AMERICAN BARBECUE SAUCE

2 tbsp vegetable oil
1 large onion, finely chopped
2 garlic cloves, finely chopped
1 cup chili sauce, ketchup, vinegar and unsulfured molasses
2 tbsp spicy brown or Dijon mustard, Worcestershire sauce and steak sauce (optional)
Hot red pepper sauce to taste

Heat the oil in a heavy-bottomed medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until golden, about 8 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Add the chili sauce, ketchup, vinegar, molasses, mustard, Worcestershire sauce, and steak sauce, if using. Bring to a simmer and reduce the heat to medium-low. Simmer, stirring often to be sure the sauce is not sticking, until slightly reduced, about 20 minutes. Stir in the hot pepper sauce.

Transfer to a bowl and cool. (The sauce can be made up to 6 weeks ahead, cooled, stored in an airtight container, and refrigerated.)
