PORK TENDERLOIN WITH ONION-APPLE CREAM

1 (12 oz) whole pork tenderloin
1 large onion, thinly sliced
1 small golden delicious apple, thinly sliced
2 tbsp butter
Parsley
Sherry Baste
6 tbsp whipping cream
2 tbsp cream sherry
1 tsp Dijon mustard
1/2 tsp salt and prepared horseradish
Place tenderloin on a rack in a broiler pan; insert meat thermometer into thickest part. Brush pork with sherry baste. Bake at 425 for 25-30 minutes.
Meanwhile, melt butter in a frying pan. Add onion and apple and cook, stirring frequently, until limp and golden, about 20 minutes. Add remaining ingredients and bring to a boil; place in a small serving bowl. Garnish meat with parsley and pass cream to spoon over.
Sherry Baste: Mix ingredients together and serve on the side.
