BURRITO BRUNCH CASSEROLE

1/2 lb sausage
1 small onion, minced
1 hot pepper, seeded and minced
2 cups hash brown potatoes, frozen
4 eggs, scrambled
6 flour tortillas, large ones, steamed
1 pound Velveeta, cubed
1 tomato, seeded and finely diced
3 tbsp milk
Tabasco sauce, a few dashes
To steam tortillas: stack the tortillas on microwaveable plate, cover with damp paper towel, and process on medium for 3-4 minutes.
In large skillet, saute sausage, onion, and pepper until sausage is cooked thoroughly and well crumbled. Add potatoes and continue cooking until potatoes are done. While cooking sausage, combine cheese and milk in pot and stir over medium heat until cheese is melted. Add tomatoes and tabasco to taste and set aside.
Pour eggs over sausage mixture and stir until eggs are set. Stir in 1/2 to 3/4 C. cheese sauce and combine well. Using 1/3 to 1/2 cup of filling in each, roll tortillas tightly and place snugly in 13x9 inch casserole. Pour remaining sauce over and bake at 350 for 15 minutes. NOTE: Leftovers can be reheated in microwave.
