Mediterranean Pot Roast (Crock Pot)

3 lb. beef boneless chuck roast
1 t. salt
1 T. Italian seasoning
1 lg. garlic clove, minced
1/3 c. oil packed sun dried tomatoes, drained and chopped
1/2 c. sliced ripe olives
1/2 c. beef broth
1/2 c frozen small whole onions

Brown roast in skillet. Place roast in slow cooker and add salt, Italian Seasoning and garlic. Spread tomatoes and olives over beef and add broth and onions. Cover and cook on low for 5 - 6 hrs. Let stand 15 minutes.
Serves 8 - 10
