ITALIAN MEAT LOAF III

2 lbs ground beef
1 lb ground pork
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1/2 lb mushrooms, sliced
1 onion, chopped
2 tbsp olive oil
1 egg, beaten
2 cups fresh bread crumbs, about 6 slices bread and put into food processor
1/2 cup provolone cheese ,cut into 1/4 inch dice
2 clove garlic, minced
1/2 cup red wine
2 tbsp parmesan cheese
1 cup cooked ham, diced
2 tbsp oregano
1 tbsp basil
Salt and pepper
Marinara sauce

Preheat oven to 375.Saute mushrooms and onions until golden. Transfer to a large bowl to cool. Add remaining ingredients and place in 2 loaf pans. Bake for 1 hour, covering with foil, if needed, the last 20 minutes. During the last 20 minutes, top each loaf with marinara sauce. Let stand 10 minutes before unmolding on cutting board or platter. Slice with a serrated knife.
