STUFFED FRIED SHRIMP

32 jumbo shrimp, shelled and deveined
1 cup cooked crab meat, shredded
1 cup shredded gruyere
2 eggs, beaten with a little water
Seasoned flour
Dry seasoned bread crumbs
Fresh bread crumbs
Oil, for deep frying
Make a slit in the inside curve of each shrimp. Mix together crab meat and cheese and stuffed mixture into shrimp. Dust each shrimp with seasoned flour, dip in the egg mixture and dredge in the dry bread crumbs. Let dry for a few minutes and rebread.
Let breaded shrimp rest for 10-20 minutes before deep frying. Preheat oil in deep to 375 and fry shrimp until breading is golden brown. Good served with Creole sauce. Serves 4-6
