SPICY STUFFED MUSHROOMS JAMBALAYA

1 lb fresh mushrooms, stems removed and chopped
2 tbsp butter
1/2 cup finely chopped yellow onion and pepperoni
1/4 cup finely chopped green pepper
1/4 tsp minced garlic
2 cups crushed butter cracker
3 tbsp grated parmesan cheese
1 tsp chopped parsley
1/2 tsp seasoned salt
1/4 tsp oregano
1/8 tsp pepper
1 cup chicken broth

Preheat oven to 325. Melt butter in a skillet; add onion and saute 5 minutes. Add stems, pepperoni, green pepper and garlic. Cook 10 minutes or until tender. Add crumbs, cheese and spices. Mix well; stir in broth. Spoon stuffing into caps, rounding the tops. Place on a baking pan with 1/4 inch water. Bake for 25 minutes. Serves immediately.
