BARBECUED CHICKEN

Category: Poultry I

1 1/2 cups cider vinegar
2 1/4 cup ketchup
3/4 cup honey
4 tsp chili powder
1 bay leaf, crumbled
1/4 tsp dried oregano
Salt and pepper, to taste
2 (4 lb) chickens, cup up

In a heavy saucepan, combine first 8 ingredients and bring to a simmer and cool.

In the refrigerator, marinate the chicken pieces in 3/4 of the sauce for at least 1 hour. Remove from the sauce and grill, covered, over medium heat, about 25-30 minutes for legs and wings and 15-20 minutes for breasts. Turn chicken frequently to keep from burning, basting with sauce after each turn.

NOTE: This sauce scorches easily when exposed to flame. Keep water bottle handy. If there is any leftover sauce, boil at lease 3 minutes before serving with chicken.
