LAYERED POTATO BAKE

4 cups potatoes, sliced about 1/4 inch thick
1/2 cup green and/or red bell pepper, sliced into strips
1/2 cup sliced onions
6-8 tbsp butter
1 to 1 1/2 cups cooked crumbled bacon
2 cups favorite grated (I used Monterey jack)

Preheat oven to 400. Melt butter in a 13x9 inch baking pan. Layer vegetables; cover and bake for 30-40 minutes or until potatoes are tender. Remove cover and add cheese and bacon. Recover until cheese is melted.
