CHOCOLATE AMARETTO BUTTER COOKIES

1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
1/4 tsp salt
1 egg, separated
1 1/2 tbsp Amaretto liqueur (or 1 tsp almond extract + 1 tbsp water)
2 oz unsweetened baking chocolate
2 cups all-purpose flour
3/4 cup sliced almonds

Preheat oven to 300. Melt and cool the chocolate to room temperature. Cream butter and sugar in a mixing bowl. Add salt, egg yolk, Amaretto and chocolate; beat until blended. Gradually blend in flour. Spread and pat the dough evenly into the bottom of an ungreased jelly roll pan or shallow baking pan.

Beat the egg white just until foamy; spread or brush it evenly over dough. Sprinkle with almonds. Bake for about 30 minutes or until set (do not over bake). Let cool for 5 minutes and then cut into 2-inch squares.
