BLUE CHEESE BUTTER

1 cup butter
7 oz blue cheese
1/4 cup shallots
1 cup white wine
1 tsp salt
1/2 tsp black pepper

Saute the shallots in a spoonful of butter over medium heat until they are softened but not brown. Add the wine and reduce until the liquid is almost all gone. Let the mixture cool.

Combine the butter, cheese, shallot mixture, salt and pepper in the food processor and process until smooth. Yield: 8 - 2 oz Servings

Note: This compound butter is a nice accompaniment to grilled steaks.
