MACADAMIA NUT BARS

1 cup flour
1 (3 1/2) oz jar macadamia nuts, coarsely chopped
1/4 tsp baking powder and salt
1/2 cup butter, softened and packed brown sugar
1 egg yolk
1 tsp vanilla extract
1 egg white, lightly beaten

Preheat oven to 325. Generously grease a baking sheet; set aside. In a medium bowl, stir flour, 1/4 cup nuts, baking powder and salt. Set aside.

In a large mixing bowl, beat butter, brown sugar, egg yolk and vanilla until well blended, scraping bowl occasionally. At low speed, beat in flour mixture until well mixed, scraping bowl as needed. Spoon dough onto center of baking sheet. Cover with waxed paper and with a rolling pin, roll into a rectangle 1/4 inch thick. Remove waxed paper. Brush surface of dough with egg white and sprinkle with remaining nuts.

Bake for 22-25 minutes or until golden brown. Remove from oven, and with a sharp knife, immediately cut into bars. Cool bars on baking sheet for 5 minutes. Transfer cookies to a wire rack to cool completely.
