FAJITAS WITH SCALLOPS AND PORTOBELLO MUSHROOMS

4 cups baby portobello mushrooms, sliced
1 large Vidalia onion, sliced
1 cup fresh cilantro, chopped
2 tsp olive oil
2 clove garlic, sliced
12 sea scallops, halved or quartered
Flour tortillas
2 avocado (optional)

In a bowl, marinate the mushrooms, onions and cilantro for 15 minutes. In a medium saute pan, heat the olive oil until piping hot, and add the onion and mushroom mixture. Saute for 1 minute, then add the garlic and scallops; cook until the scallops are cooked through. Serve in flour tortillas with 1/4 cup diced avocado in each, if you like.
