HERBED POTATO PIE

10 baking potatoes, washed and peeled
4 clove garlic, minced
4 shallots, chopped
3 tbsp parsley
1 tsp dried any herb (thyme, rosemary, sage, basil or oregano)
1 cup Asiago cheese
4 tbsp parmesan cheese
1 cup chicken broth
Salt and pepper
Parmesan cheese

Preheat oven to 350. Slice potatoes into 1/8 inch slices. Coat a 12 inch round baking dish with butter. Slightly overlap potato slices in the bottom to form a spiral. Combine next 8 ingredients in a small bowl. Sprinkle 1/3rd of this mixture over the potatoes. Add to more layers of each. Pour broth over and cover potatoes. Sprinkle with parmesan cheese. Bake for 45 minutes or until potatoes are tender. Cut into wedges and serve.
