CRANBERRY BARS

Filling
1 (12 oz) bag fresh cranberries
1 cup sugar
3/4 cup water

Crust
1 yellow cake mix
3/4 cup melted butter
2 eggs
1 cup rolled oats
3/4 cup packed light brown sugar
1 tsp ground ginger
1 tsp ground cinnamon

Preheat the oven to 350. In a saucepan over medium heat, combine the cranberries, white sugar, and water. Cook, stirring occasionally until all of the cranberries pop, and the mixture thickens, about 15 minutes. Remove from heat, and set aside to cool.

In a large bowl, mix together the cake mix, melted butter, and eggs. Stir in the oats, brown sugar, ginger and cinnamon. It will form into a solid blob. Set aside about 1 1/2 cups of the mixture, and spread the rest into the bottom of a 9 x 13 inch baking dish. Pack down to form a solid even crust.

Spread the warm cranberry mixture over the bottom crust. Pinch off small pieces of the remaining mixture and drop evenly over the cranberry layer.

Bake for 35 to 40 minutes, until the top is lightly browned. Cool in the pan for about 40 minutes before slicing into bars. Note: The filling part of the recipe is almost identical to the cranberry sauce recipe on the bag; it uses slightly less sugar. In a pinch you could use canned cranberry sauce.
