TARRAGON TURKEY TENDERLOINS

Category: Poultry I

2 large turkey tenderloins (about 3/4 lbs each)
1/3 cup olive oil
1/4 cup fresh tarragon
2 tbsp red wine vinegar
1 tbsp Dijon mustard
2 cloves garlic, minced
Salt and pepper to taste

Combine all ingredients except the turkey and mix well. Place turkey tenderloins in a resealable bag and pour in marinade. Turn to coat and refrigerate for at least 2 hours or overnight.

Preheat grill. Grill turkey until the center is no longer pink, about 20 minutes over a medium fire. Carve into medallions and serve.
