2 portobello mushroom caps
1 tbsp olive oil
1 tsp lemon juice and lemon zest
4 cups lettuce
2 tbsp walnut oil
Juice of 1 lemon
Pepper and shaved parmesan cheese

Preheat grill. Mix olive oil, juice and zest. Brush on mushroom caps. Place mushrooms fin-side down and grill for 2 minutes. Flip and grill for 3 more minutes. Prepare 2 salad plates. Dress the greens by drizzling first with the walnut oil and then with the lemon juice. Season with pepper and top each with grilled mushroom. Shave with cheese. Serves 4
