CRISPENED NEW POTATOES

1 1/4 lb new potatoes, about 24
2 tbsp grated parmesan cheese, yellow cornmeal and flour
1 tsp parsley
1/4 tsp dried dill weed
1/2 tsp paprika
1 egg white
1/4 cup milk
3 tbsp butter, melted

Cook whole potatoes in lightly salted boiling water. Drain; rinse in cold water and drain. Quarter larger potatoes. In a shallow dish, combine cornmeal, flour, cheese and seasonings.

In another shallow dish, whisk together egg white and milk. Lightly spray a baking dish with cooking spray. Dip potatoes in egg-white mixture then into flour mixture. Place in the baking dish and drizzle with butter. Cover; bake at 400 for 10 minutes. Uncover, and bake for 10 minutes more or until tender. Serves 4-5
