DOUBLE BAKED BARBECUE POTATOES

6 large baking potatoes
1 (16 oz) carton sour cream
1 1/2 cups shredded cheddar cheese, divided
1/2 cup butter, softened
2 tsp salt
Pepper, to taste
1 lb finely chopped barbecue pork butt
1 large red, yellow and green bell peppers, finely diced

Wash potatoes; pierce with for; wrap in foil. Grill over high heat about 45 minutes or until potatoes test done. (Or, bake in the oven at 400 for 1 hour.) Allow to cool slightly.

Unwrap potatoes. Cut in half lengthwise. Carefully scoop potato out of each half to within 1/4 inch of skin, reserving skins. Place hot potatoes in a large mixing bowl. Add sour cream, 3/4 cup cheese and butter, blending well. Stir in salt, pepper and chopped barbecue.

Spoon mixture into reserved potato skins. Sprinkle with remaining cheese and finely diced bell peppers over potatoes. Return to grill or oven and cook over medium heat until cheese melts. Serve as main dish with salad or as a side dish. Serves 6-12
