SUMMER COLESLAW WITH POPPYSEED DRESSING

2 lb (32 oz.) pkg coleslaw mix (just cabbage and carrots) or 1 head green cabbage, shredded and 2 carrots, shredded
1/2 red onion, diced
1 red bell pepper, diced
1/4 cup chopped fresh chives

Dressing:
1 cup mayonnaise
1/4 cup canola oil
1/2 cup red wine or apple cider vinegar
1 tbsp poppy seeds
1 tbsp sugar
1 tsp salt
1/4 tsp ground white pepper

Combine all ingredients for salad in bowl. Whisk together the dressing ingredients and pour over slaw. Toss well. Cover; allow to sit for several hours in refrigerator before serving. Serves 10.
