COUSCOUS SALAD

2 cups water or broth
1 (10 oz) pkg couscous
1/4 cup olive oil
2 tbsp fresh lemon juice
2 large tomatoes, chopped
1 medium zucchini, chopped
1/2 cup fresh basil, chopped
3 scallions, thinly sliced
1/2 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
1 (4 oz) pkg crumbled feta cheese
In a medium saucepan, bring the water or broth to a boil over medium-high heat. Stir in the couscous, cover and remove from the heat; let stand for 5 minutes. Fluff lightly and place in a large bowl to cool. Add the remaining ingredients except the cheese and mix well. Chill for at least 2 hours or overnight. Stir in cheese just before serving. Serves 8-10
