CHEESY HASH BROWN CASSEROLE

Category: Hash Brown Potatoes/Casseroles

1 (30 oz) pkg frozen shredded hash browns
1 cup shredded Colby-jack and Swiss cheese
1 large onion, minced
1 tsp minced garlic
1 1/2 cups milk
1 can cream of chicken soup
1/2 cup beef broth
2 tbsp butter, melted
1 1/2 tsp salt
1/2 tsp pepper

Combine first 5 ingredients in a bowl. Stir together milk and next 5 ingredients and pour over hash brown mixture. Pour into a lightly greased 13x9 inch baking pan. Bake at 350 for 45-55 minutes or until golden.

Variation: Pepper Jack Potato Casserole - Omit cheeses, onions and beef broth. Substitute 1 (8 oz) pkg shredded Monterey Jack cheese with pepper, shredded. Proceed at directed.
