CHEESY CRAB STUFFED POTATO

4 medium baking potatoes
1 cup grated sharp cheddar cheese
1/2 cup butter and half-and-half
1/4 cup diced onion
1/2 tsp salt
1/4 tsp red pepper
1 (6 oz) can crabmeat, flaked and drained
Paprika
Scrub potatoes, poke with a fork and bake at 400 until soft. Allow to cool enough to handle. Split the potatoes in half and scrap out the pulp into a large bowl. Save the skins. Add the next 6 ingredients and mash well. Fold in crabmeat. Stuff back into the potato skins and sprinkle with paprika. Bake at 425 for 15-20 minutes or until the potatoes are heated through. Serves 4
